It’s been a busy behind the scenes kinda day!!
Morning gratitude followed by some simple stretches - because rest days are important too!!
Then hosted a team call with my coaches where we talked all things confidence!!!
Did you know confidence is something you can learn and grow???
I used to lack confidence big time!!
Until I learned that competence build confidence!!!
You will only gain confidence by doing things, not by just reading about them!!!
You can read all the books and watch all the videos but it’s not until you actually do the things that your confidence grows!!
Then I popped into my Ultimate Wellness Makeover Group and helped them get all set up for our deep dive into nutrition tomorrow!!
Honestly, I am so excited about this group!!
We have a huge focus on emotional eating, sugar addiction and family nutrition!!
The women in my group and there to learn how to help themselves eat better and fuel their bodies, but also the help their families as well!!!
And now it’s time to refuel!!!
I don’t share what I eat nearly enough with you.
Probably because I eat the same things all the time and don’t think you want to see that.
But today I was reminded that you DO want to see what I eat!!
So here was today’s lunch.
Tuna wraps with a side of sliced red pepper.
And yes, my kids ate the tuna too.
I do not make separate meals for my kids - we all eat the same things.
This is a super simple lunch that you can throw together for a packed lunch or at home.
I used 3 cans of light tuna (enough for 2 adults and 2 kids)
In a medium bowl I mixed the drained tuna and 1 tsp of extra-virgin olive oil. And added some black pepper.
That’s it!
I’m not kidding when I say what I eat is super simple.
I laid a few slices of pepper on a white wheat wrap, added some tuna and rolled it up.
The rest of the sliced peppers I just ate on the side.
You can always spice up the tuna with Dijon mustard or tarragon, but I like to keep it simple. Especially if my kids are eating it too.
So that’s lunch!!
Now it’s time to get back to work so I can help get those last minute stragglers get registered!!!!
